Meyer Lemon Basil Salad Dressing, Nutty Quinoa Cakes with Basil, and Peach Basil Mozzarella & Balsamic Pizza

It’s basil season, and that means one thing: pesto!
We could happily eat fresh pesto every day, and in fact, we did just that for a couple weeks straight without the slightest hint of boredom. We feasted on pasta with pesto, dabbed it on ripe tomatoes, deftly stirred it into soups, and used it as a dip for raw vegetables.
For two great pesto recipes we recommend either How to Make Pesto like an Italian Grandmother beautifully described by Heidi Swanson, or the machine-aided but still Classic Pesto recipe from Epicurious.
But here’s our great discovery of the summer of 2011: there’s more to basil than pesto!
We were inspired by our own Natlie Lewis’ recent recipe for Blueberry Basil Smoothies to branch out and explore what flavors and foods work well with this mild and seductively aromatic herb. Creative and talented food bloggers were already one step ahead of us and we happily discovered three outstanding food blogs and three eye popping and mouth-watering recipes for summer.
Grab some basil at your nearest farmer’s market and have some creative fun!
Meyer Lemon-Basil Salad Dressing Recipe
You’ll be making salads just as an excuse to eat this light, ginger and honey kissed lemon basil dressing from West Coast chef and mom Valentina. It’ll keep for several days in the fridge – if it lasts that long!

Nutty Quinoa Cakes with Basil and Parmesan
Phoebe and Cara have deconstructed pesto and created a brilliant, portable and healthy lunch, suitable for picnics or the office. These nutty quinoa cakes have well-balanced flavor, great texture and are make-ahead friendly. A no-brainer for relaxed summer schedules.

Peach, Basil, Mozzarella and Balsamic Pizza
It sounded strange to us at first, too, but Maria and Josh Lichty transformed a pregnancy craving into a creative and healthy tour de force. Use aged Balsamic and everything else achingly fresh: juicy peaches, creamy mozzarella, homemade dough and just-picked basil for a uniquely delicious summer pizza.
